Taco Cups

Soft tacos turned “crunchy”!

Ingredients:

  • Corn tortillas

  • 2lbs lean ground beef

  • Low-sodium taco seasoning

  • Onions, diced, optional

  • Bell peppers, diced, optional

  • Green chiles

  • Red enchilada sauce

  • Fiesta blend shredded cheese

  • Topping options:

    • Avocado

    • Diced tomatoes

    • Salsa

Instructions:

  1. Preheat over to 350.

  2. Cook the ground beef with the taco seasoning. Optional to add diced onions and bell peppers to the mix!

  3. Grab a muffin pan. Cut each tortilla halfway with kitchen shears to overlap them into “cones” when placed in the muffin pan. If possible, try to fill the gap at the bottom.

  4. Scoop the ground beef mixture into each muffin spot.

  5. Add a scoop of green chiles in each spot.

  6. Then add a little enchilada sauce, amount to your liking.

  7. Finish with a generous amount of cheese on top.

  8. Bake for about 30 min.

  9. Top with anything you like! These reheat well, too.
