Overnight Oat Bake

The texture of these is less like a muffin bake and more like thick overnight oats with a firmer top. The inside is more like oats but firms up some more in the fridge. It’s an easy way to change things up with very similar ingredients!

And the flavor options are endless- literally. Between the flavor of protein powder and Greek yogurt- there are so many combos you can try!

Ingredients:

  • 2 ripe bananas, smashed

  • 2 cups rolled oats

  • 1 scoop vanilla protein powder (or any flavor- so many options here. Banana flavor has also been a huge hit!)

  • 5 ounces Greek yogurt, your flavor of choice (again, the options are endless. Vanilla goes with anything. Recently, I did a Raspberry Lemon flavor with vanilla protein powder- yum!)

  • 2 teaspoons vanilla extract

  • About 1 cup frozen blueberries or more! Or your frozen fruit of choice

Instructions:

  1. Preheat your oven to 350 and put parchment paper into an 8X8 pan or spray. I recommend the parchment paper- this can be a stickler to clean!

  2. Use a fork to mash your bananas in a large mixing bowl.

  3. Mix in your protein powder, greek yogurt, vanilla extract, and oats.

  4. Then mix in your frozen blueberries.

  5. Bake for about 25-30 minutes. The top should feel firm, but the rest will have a texture closer to thick overnight oats. It will firm up more in the fridge if you want to wait to cut it up. Personally, it is my favorite fresh out of the oven! (Time might vary slightly based on your protein powder and frozen fruit.)

  6. Reheat in the morning for breakfast or eat it cold!

  7. Again, flavor combos are endless here. Have fun with it! You can also add any toppings you want after you bake it.
