Banana Overnight Oat Bake

The texture of these is less like a muffin bake and more like thick overnight oats with a firmer top. It is a little mushier, but firms up some more in the fridge. It’s an easy way to change things up with very similar ingredients!

Ingredients:

  • 1 ½ scoops Banana protein powder

  • 2 ounces vanilla or plain greek yogurt

  • 1 teaspoon vanilla extract

  • 1 ripe banana

  • 1 cup rolled oats

  • 1/2 cup frozen blueberries

Instructions:

  1. Preheat your oven to 350.

  2. Note: I doubled this to fill an 8X8 pan, but I mixed the ingredients in 2 separate bowls to help the protein powder mix in. You can cook these right into a Pyrex dish and then store them in that for breakfast prep!

  3. Use a fork to mash your banana in a bowl.

  4. Mix in your protein powder, greek yogurt, and vanilla extract.

  5. Mix in your rolled oats.

  6. Then mix in your frozen blueberries.

  7. Spray an 8X8 pan or use parchment paper. Pour the mixture(s) into the pan.

  8. Bake for about 25 minutes. The top should feel firm, but the rest will have a texture closer to thick overnight oats. It will firm up more in the fridge if you want to wait to cut it up. (Time might vary slightly based on your protein powder and frozen fruit.) The kids like it broken up like a ‘’scramble’’ too.

  9. Reheat in the morning for breakfast!

  10. Note: You can play with different flavor options with the protein powder, yogurt, and fruit.
