Sweet Potato Tot Frittata
One of our favorite breakfast meal preps!
Ingredients:
1 1/2 bags frozen sweet potato tots
1/2 ground sausage, optional
20 eggs
1/4 cup plain fat-free Fairlife milk
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
4 green onions, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1 cup shredded cheddar cheese
Hot sauce, for serving
Instructions:
Preheat the oven to 425 degrees (per the sweet potato tot bag).
Add the frozen tots to a large baking dish (I used a 9X13 disposable aluminum pan for easy cleanup) and cook the tots for about 20 minutes. They won’t be serving-ready yet as they will still cook later; you just don’t want them frozen anymore.
Cook the ground sausage on the stove, if using. Drain the grease.
Add the bell peppers and onion to the same skillet the sausage was cooked in and sauté for 2- 3 minutes.
Whisk together the eggs, milk, salt, and black pepper in a large bowl. Add the cooked sausage, peppers, and onion to the bowl with the egg mixture. Stir everything to combine.
After you take out the tots, pour the egg mixture on top. Sprinkle on some more cheese and black pepper, optional.
Turn the oven down to 375. Bake for 40-50 minutes or until the edges are set and the center is just done/maybe slightly jiggly but not liquidy. Check it at 40 minutes and cut down the middle like you would when cutting out squares. If you see a lot of liquid, it needs just a little longer.
Note: You may need less time if you make yours smaller or use less eggs. If so, cut it down to 20-30minutes and keep checking every 10min.
Serve with hot sauce. Enjoy!
