Crockpot Steak, Peppers and Onions
Ingredients:
2 1/2 lbs top sirloin steak, thinly sliced
3 large bell peppers, sliced thick (use a mix of red, yellow, and green for vibrant color)
1 large onion, sliced
3 garlic cloves, minced
¾ cup low-sodium beef broth for a lighter sodium content
3 beef bouillon cubes, crushed/smashed
¼ cup low-sodium soy sauce
2 teaspoons Worcestershire sauce
2 tablespoons honey
1 teaspoon ground ginger
½ teaspoon black pepper
½ teaspoon salt
2 tablespoons cornstarch
Rice and sesame seeds, for serving
Instructions:
Prepare the Savory Sauce: In a mixing bowl, combine hot beef broth, crushed bouillon cubes, soy sauce, Worcestershire sauce, honey, ground ginger, black pepper, salt, and cornstarch. (Note: if your bouillon cubes won’t smash, try wrapping them loosely in plastic wrap and heat in the microwave for 30 sec.) Stir until the bouillon cubes dissolve and the mixture is smooth.
Layer the Ingredients in the crockpot. Place the beef strips at the bottom of the slow cooker. Pour the prepared sauce over the beef, ensuring it is evenly coated. Top with sliced bell peppers, onions, and minced garlic.
Cover and set your slow cooker to LOW for 6 hours or HIGH for 3 hours. If possible, stir the ingredients halfway through cooking for optimal flavor and texture.
Once cooked, stir well and transfer to a serving dish. Serve with rice and top with sesame seeds.
