Salsa Verde Chicken
I love this chicken in Air Fryer Quesadillas! Need a shorter & quicker crock pot chicken recipe? This one is only 3 ingredients!
Ingredients:
3 pounds boneless skinless chicken breasts
1 medium onion, sliced
2 bell peppers, chopped
4-6 cloves garlic smashed
1 jar salsa verde 24 ounces
1/4 cup tomato paste
2 tablespoons avocado oil
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons sea salt
2 teaspoons black pepper
2 bay leaves
Instructions:
Place chicken and salsa verde in the crock pot, coating the chicken with the sauce.
Mix in a bowl everything else- oil, onions, garlic, paste, and spices. Then mix in with the chicken and salsa.
Lay the bay leaves in the crock pot.
Cover and cook on high for 4 hours, or until the chicken is fork-tender and pulls apart easily. Remove, shred, and enjoy with a rice mixture and veggie of your choice! Or use it for Air Fryer Quesadillas- YUM!
