Air Fryer Chicken Quesadillas

Ingredients:

  • 2 medium-sized tortillas- per serving (I like the Xtreme High Fiber Spinach & Herb ones)

  • About 6 oz Cooked and Shredded Chicken- per serving

  • About 2 oz Shredded Mexican Cheese, to sprinkle inside- per serving

  • Olive Oil Spray or Olive Oil, for brushing the tortillas

Instructions:

  1. Sprinkle shredded cheese on 1/2 of each tortilla. Add shredded chicken on top of the cheese. Then top with a little more shredded cheese. Fold to close.

  2. Spray the air fryer basket and the top of each quesadilla with olive oil spray or brush oil on both sides before adding them to the basket.

  3. Place the quesadillas in the basket and use an air fryer or oven-safe rack to keep your quesadillas closed.

  4. Air fry for 8-10 minutes at 400ºF, flipping halfway through for even crispness.

  5. Serve with a cheese dip or salsa, rice, and a veggie; options are endless!
