Protein Baked Oatmeal
My sister requested new breakfast recipes, so I am posting some of the kiddos’ favorites! Lately, I have been alternating between overnight oats and an oatmeal bake.
Ingredients:
2 cups old-fashioned rolled oats
½ cup vanilla protein powder
2 cups fat-free Fairlife milk (kiddos get Growing Years whole milk)
¼ cup peanut butter or any nut butter
2 large eggs
3 Tablespoons sugar-free maple syrup
1 Tablespoon coconut oil, melted
3 Tbsps chia seeds
1 teaspoon vanilla
¼ teaspoon salt
1 cup fresh blueberries, with extra to sprinkle on top (or any fruit of choice)
An optional addition: I added a few raspberries on top before baking to change it up, and the kids loved it. However, it needed to bake a few more minutes!
Jam, for topping (after finished baking)
Instructions:
Preheat oven to 375°F and spray an 8-inch square baking dish with cooking spray.
Mix the oats, protein powder, milk, peanut butter, eggs, maple syrup, coconut oil, chia seeds, vanilla, and salt in a large bowl.
Stir in the blueberries and pour the oatmeal mixture into the prepared baking dish. Spread the blueberries out and can add more to the top.
Bake for about 30-35 minutes or until the center is set. Remove from the oven and let cool for a few minutes.
Portion and serve with Jam, or place in a Tupperware for breakfast for the week. I like to eat mine with scrambled eggs!
