Strawberry Shortcake Protein Overnight Oats

Created by Nikki, made by the hubs! I promised him he would get credit, haha. He helped prep the kids’ breakfast and made some extra for me to try. It was yummy! It probably would be prettier in the mason jar :)

Ingredients:

  • 1 cup fat-free Fairlife, or milk of choice (kids get Growing Years whole milk)

  • 1/2 cup Vanilla or Plain Greek Yogurt (kids get regular yogurt, vanilla, or plain)

  • 1 1/2 cups frozen Strawberries

  • 1 1/2 cup Old fashioned oats

  • 1 cup vanilla protein powder (if you omit the protein powder, add about an extra 1/4 cup of oats. I don’t always add the protein powder to the kids’ mix. This gives it a good consistency.)

  • 1 tbsp sugar-free syrup

  • 1 Tbsp chia seeds

Instructions:

  1. Mix all ingredients into a bowl. Stir well to combine. Using fresh ripe strawberries, you can smash some at the bottom of the bowl to make juice form.

  2. Divide between 2 small bowls, mugs, or mason jars.

  3. Cover and refrigerate overnight.

  4. Microwave for 30-60 seconds to enjoy warm!

  5. Can top with cinnamon and fresh strawberry slices. Or the kids also love frozen blueberries on top before microwaving.
