Oven Roasted Veggies
The possibilities are endless here! Veggies we love roasting: Broccoli, Cauliflower, Green Beans, Asparagus, Bell Peppers, Carrots, Cherry Tomatoes, Beets, Onions, Brussels Sprouts, Sweet Potatoes, and I’m sure there are more I am missing! It is so easy and you really can’t go wrong with any of these.
Ingredients:
Pick your favorite veggies! See the above list for ideas.
Olive oil
Topping ideas:
Italian Seasoning, to taste
Garlic Powder, to taste
Salt and pepper, to taste
Chili pepper, to taste
Paprika, to taste
Parmesan cheese, to taste
For toddler mamas: Nutritional yeast (this is what my kiddos sprinkle on to help me prep dinner. They tend to eat it along the way, so this is right in the toddler wheelhouse.)
Instructions:
Preheat oven to 400 degrees.
Prep the veggies- chop them and throw into a large bowl.
Add olive oil and any seasonings of choice. Endless options here!
Spray a baking sheet. Place them spread out onto the baking sheet.
Cook for 25-35 minutes. Rotate the pan halfway through. If cooking multiple pans on different racks, flip them as well halfway through.
Top with parmesan cheese and serve warm!
