Mini Protein Cake in a Bowl (aka “Mug” Cake)

This can be done in a bowl or a mug! Once you find the size that works best for you, stick with that one! The flavor options are endless here, and the sweet spot for cooking your protein powder may take a little practice. One second too long will make it too dry. I will explain what has worked best for me!

Ingredients:

  • 2 scoops protein powder (Your choice! My favorite has been Chocolate Brownie. See *note* for combo ideas)

  • 1 Tbsp PB2 Powder

  • ¼ tsp baking powder

  • ½ Tbsp cocoa powder

  • 1 Tbsp oat flour

  • ¼ tsp vanilla extract

  • 1 liquid egg white (2 Tablespoons)

  • ½ Tbsp sugar-free syrup

  • ¼ cup fat-free or low-fat plain Fairlife milk or chocolate, depending on flavor of protein powder

  • 10-12 Lily’s baking chips (Any flavor! I love the white chocolate) and a few more to add to the top.

    *Note: The flavor options are endless here. My favorites have been Chocolate Brownie protein with Plain Fairlife or Cookies in Cream protein with Chocolate Fairlife.

Instructions:

  1. Mix all ingredients into a bowl. For simplicity, I add the dry ingredients first.

  2. Add a few baking chips to the top.

  3. Heat for 45sec in the microwave. Stop it and then cook for 10 more seconds. Baking with protein powder is touchy. It dries out quickly if it cooks too long. When you nail this, YOU WILL KNOW! It may vary based on your protein powder and microwave. If I go 55sec straight through, it dries out. I like the center to be a little soft still.

  4. Eat right away- if it sits around, it dries out. Easy way to sneak in more protein! Enjoy!
