Honey Glazed Salmon Bowl

Ingredients:

  • 4 skinless salmon filets, about 6oz each

  • 2 Tablespoons avocado oil or olive oil

  • 3 Tablespoons honey

  • 1 Tablespoon low-sodium soy sauce

  • 1 Tablespoon sriracha

  • 2 cups cooked rice, your preference (I used jasmine rice)

  • 1 medium avocado

  • 1 cup cucumber, diced

  • 1/2 cup finely chopped cilantro

  • 1 Tablespoon fresh lime juice

  • 2 teaspoons honey

  • Sriracha mayo sauce, for serving

Instructions:

  1. Preheat the oven to 425 degrees.

  2. Cut the salmon filets into cubes.

  3. Toss the cubed salmon with avocado or olive oil, honey, soy sauce, and sriracha.

  4. Add in a single layer to a baking sheet and roast for 10 minutes. Then switch the oven to broil and broil for just 2-3 minutes to crisp it up.

  5. Slice the avocado into cubes. Toss to combine the avocado, cucumber, cilantro, lime juice, and honey.

  6. When the salmon is done, assemble your bowls with a base of rice, then layer on the salmon, cucumber salad, and drizzle with the sriracha mayo sauce. Enjoy!
