Honey Glazed Salmon Bowl
Ingredients:
4 skinless salmon filets, about 6oz each
2 Tablespoons avocado oil or olive oil
3 Tablespoons honey
1 Tablespoon low-sodium soy sauce
1 Tablespoon sriracha
2 cups cooked rice, your preference (I used jasmine rice)
1 medium avocado
1 cup cucumber, diced
1/2 cup finely chopped cilantro
1 Tablespoon fresh lime juice
2 teaspoons honey
Sriracha mayo sauce, for serving
Instructions:
Preheat the oven to 425 degrees.
Cut the salmon filets into cubes.
Toss the cubed salmon with avocado or olive oil, honey, soy sauce, and sriracha.
Add in a single layer to a baking sheet and roast for 10 minutes. Then switch the oven to broil and broil for just 2-3 minutes to crisp it up.
Slice the avocado into cubes. Toss to combine the avocado, cucumber, cilantro, lime juice, and honey.
When the salmon is done, assemble your bowls with a base of rice, then layer on the salmon, cucumber salad, and drizzle with the sriracha mayo sauce. Enjoy!
