Banana Coffee Cake with Greek Yogurt

It probably reminds me more of a banana bread, but the goal was a coffee cake! It is very moist from the mashed bananas, but I didn’t add any nuts on top, so I didn’t want to call it a Banana Nut Bread..but it could be! :) If you like banana bread, then you’ll love this!

Ingredients:

  • 3 ripe bananas, mashed

  • 1/2 cup plain non-fat Greek yogurt

  • 1/2 cup unsweetened applesauce

  • 3/4 cup granulated swerve

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 3/4 cup oat flour (or flour of choice)

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1 tsp cinnamon, plus more to taste

  • 1/2 tsp nutmeg

  • Brown swerve, to taste

Instructions:

  1. Preheat oven to 350°F and grease an 11x7 baking dish with nonstick spray. (Or any pan of similar size works fine!)

  2. In a medium bowl, mix together the mashed banana, Greek yogurt, applesauce, granular swerve, vanilla, and eggs.

  3. In another medium bowl, whisk together your flour, salt, baking soda, 1 tsp cinnamon, and nutmeg.

  4. Combine the wet and dry ingredients and mix until just combined. Don't overmix!

  5. Pour half the batter into the baking dish, then top with cinnamon.

  6. Pour the remaining batter and top with additional cinnamon and brown swerve to taste.

  7. Bake for 40 minutes, or until the tops are browned and a toothpick comes out clean.
