Protein Blueberry Oat Muffins

These didn’t last very long! The kids loved them!

Ingredients:

  • ¼ cup Low-fat or fat-free Plain Fairlife Milk (or milk of choice)

  • 1 Egg

  • 1 cup Plain Greek Yogurt

  • 2 tsp. Vanilla extract

  • 2 cups Oats

  • 4 tbsp. Swerve Granulated erythritol (any brand is fine!)

  • 2 scoops Vanilla Protein Powder

  • 2 tsp. Baking powder

  • ½ tsp. Baking soda

  • ½ tsp. Cinnamon

  • ¼ tsp. Salt

  • 1 1/4 cups Blueberries

Instructions:

  1. Preheat the oven to 350°F.

  2. Place silicone muffin cups in a muffin baking pan.

  3. In a large bowl, combine milk, egg, greek yogurt, and vanilla until well combined.

  4. Add the oats, erythritol, protein powder, baking powder, baking soda, cinnamon, and salt to the bowl. Mix until well combined, but be careful to overmix!

  5. Add the blueberries and mix them into the batter.

  6. Scoop the mixture into the muffin tins and bake for 20-25 minutes.

  7. Let them cool before serving. You can add jam or nut butter on top!
