Air Fryer Egg Salad

Ingredients:

  • 14 large eggs

  • 6 tablespoons light mayonnaise

  • 2 tablespoons finely chopped chives or scallions, plus more for garnish

  • 1/4 teaspoon kosher salt

  • fresh black pepper, to taste

  • 1/8 teaspoon sweet paprika, for garnish

Instructions:

  1. Place the eggs in the air fryer basket and set the temperature to 300°F. Cook for 15 to 16 minutes, depending on your air fryer.

  2. Once the eggs are cooked, remove them from the air fryer and run them under cold water.

  3. Peel the eggs and chop them into small pieces.

  4. In a separate bowl, mix together the mayonnaise, salt, and pepper. Add the chopped eggs and chives.

  5. Stir until everything is well combined. Top with paprika and chives, for garnish.

  6. Serve the egg salad on top of your favorite bread, crackers, wrap or lettuce leaves, or use it to make a sandwich. Enjoy!
