Watermelon Jello Shots on the Rind
A little bit different than my usual “healthier” recipes, but these are just too cute not to share! Did not get a great picture, but party time is so busy haha. We made them for the kiddos’ birthday party (for the adults, of course), and were a huge hit! There is also a yummy drink you can make with the extra watermelon (see **notes below!) Ingredients:
1 medium watermelon, cut in half
For Each Watermelon half:
2 boxes watermelon flavored jello/gelatin
1 cup boiling water
1 cup watermelon vodka
Instructions:
Cut the watermelon in half and scoop out the insides. Now you have a watermelon bowl! (Save the watermelon and make a yummy tropical drink! See **notes below!)
Be sure to scoop the watermelon out so that there is minimal pink left on the rind.
Put the watermelon half into a larger bowl, so it'll stand upright when you fill it.
Pour the watermelon gelatin into a mixing bowl.
Add 1 cup boiling water and stir well.
Add 1 cup watermelon vodka and stir.
Pour mixture into watermelon half.
Transfer to the fridge to set, about 4 hours.
Slice up and serve!
**Notes: For the watermelon drink:
Blend about 7 ½ cups of watermelon, then strain.
Then mix in:
3 ¼ cups of crystal light lemonade
2 ¾ cup Rum
1 ¼ cup Malibu Coconut
2 ¾ cup pineapple juice.
Serve on ice.
