Tomato, Spinach, and Beef Pasta

Ingredients:

  • 3 lbs lean ground beef

  • 3 boxes of Banza chickpea pasta (or your pasta of choice!)

  • 1 jar of low-sodium pasta sauce (will mix in the amount to your liking)

  • 8 garlic cloves, peeled and minced

  • 7-10 oz cherry tomatoes, roughly chopped

  • 2 red bell peppers, cored and diced

  • 3-4 handfuls of fresh spinach

  • 3 teaspoons paprika

  • 1 teaspoon cayenne pepper

  • 1-2 teaspoons chili flakes

  • 1 teaspoon of pepper

Instructions:

  1. Start by cooking the pasta al dente, according to the package directions.

  2. While the pasta is cooking, cook the beef breaking it up until almost cooked through.

  3. Add the garlic and cook until fragrant and the beef is no longer pink.

  4. Add the chopped tomatoes, bell peppers, spinach and seasonings.

  5. When the pasta is cooked, drain and stir it into the meat mixture.

  6. Add the pasta sauce, amount to your liking.

  7. Serve the pasta with black pepper and chili flakes. Enjoy! ❤️
