Baked Protein Pumpkin French Toast

Ingredients:

  • 1 Cup fat-free plain Fairlife, or milk of choice

  • 2 scoops pumpkin protein powder (or vanilla or any flavor that goes with pumpkin! I think Pumpkin flavor is the best!)

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup pumpkin puree

  • 1 tsp pumpkin pie spice

  • 6-8 pieces of bread, your choice (I used Dave's Killer Bread 21 Whole Grains and Seeds, Thin-Sliced, Organic Whole Grain Bread)

  • Toppings:

  • 2 Tbsp Swerve brown sugar

  • 1/2 tsp ground cinnamon

Instructions:

  1. In a large mixing bowl, mix your milk and protein powder.

  2. Mix the rest of your ingredients, aside from your bread until smooth.

  3. Cut up your bread into smaller pieces or strips.

  4. Coat a baking dish with some non-stick cooking spray. Add your Bread pieces to your dish. Pour over your pumpkin mix. Flip your bread pieces around a few times until fully coated. Evenly distribute your toppings over your dish.

  5. Put your dish into the fridge for a bit, which will allow the rest of your mix to be absorbed into your bread.

  6. Bake it at 350F for around 35-40 minutes.

  7. I served with eggs and a little sugar-free syrup. Delish!
