Taco Pie

Ingredients:

  • 1 9-inch pie crust or frozen

  • 1 pound lean ground beef or bison

  • 1 Tbsp Olive Oil

  • ½ of one onion, diced

  • 1 green bell pepper, diced

  • 1 packet low-sodium taco seasoning or make your own

  • ½ cup salsa of choice

  • ½ cup low-sodium back beans

  • ¾ cup corn

  • 1 cup shredded Mexican cheese

  • Optional toppings:

    • lettuce, shredded

    • tomatoes, diced

    • sour cream or Greek yogurt

    • avocado, sliced

    • taco sauce or additional salsa

Instructions:

  1. Preheat the oven to 400° F.

  2. Add the olive oil, ground beef, onion, and bell pepper to a skillet. Once the meat starts to brown, add the salsa, beans, and corn. Once the ground beef is cooked, simmer until the vegetables are soft.

  3. For fresh pie crust: Place the pie crust in the pie dish. Crimp edges and poke holes in the bottom of the crust using the tines of a fork. Bake for 13 to 15 minutes or until golden brown. For frozen: Let it thaw on the counter while you are cooking. Bake it for about 5 minutes before filling. I have made it both ways and both turned out great!

  4. Transfer the meat mixture to the pie crust. Place taco filling in one even layer. Top with cheese. Bake for 13 to 15 minutes or until cheese is melted and golden. If doubling this, as I did, split the meat mixture in half for each pie crust.

  5. Remove from oven, slice, and serve with desired toppings.
