Sweet Potato Tater Tot Casserole

This was the right amount of “comfort” and health that I was looking for! :) I doubled it and used a large aluminum pan for easy clean up!

Ingredients:

  • 1 pound lean ground beef - I used 96/4 beef, but turkey or chicken would work great, too!

  • 1 green pepper, diced

  • 1 yellow pepper, diced

  • 1 orange pepper, diced

  • ½ red onion, diced

  • 2 teaspoons garlic, minced

  • 1 teaspoon black pepper

  • ¼ teaspoon salt

  • 1 teaspoon Italian seasoning

  • 1 can 98% Fat-Free cream of mushroom or Chicken. (You may also substitute with gravy)

  • 1 pound frozen sweet potato tater tots or regular

  • ¾ cup shredded cheese, your choice (I used the Fiesta blend)

Instructions:

  1. Preheat your oven to 350.

  2. Chop up your vegetables.

  3. Add oil to your stovetop pan and heat over medium heat. Add your chopped vegetables and cook for a couple of minutes (keeping them moving).

  4. Add in your ground meat and break it up. Drain.

  5. While your ground meat is browning, add minced garlic, black pepper, salt, and Italian seasoning. Mix everything until the ground meat has browned.

  6. Reduce the heat to low and add a can of cream of mushroom or chicken. Mix everything and let it cook for a couple of minutes.

  7. Pour that mix into a 2-quart baking dish. Top it with your bag of frozen tater tots, followed by your cheese.

  8. Put it in the oven for about 40-45 minutes, or until the tater tots are golden brown.
