Snickers Baked Oatmeal With Peanut Butter Protein Icing

Ingredients:

  • 2 cups rolled oats

  • 2 cups milk, of your choice (I used fat-free Fairlife)

  • 1/3 cup cacao powder

  • 1/2 cup PB2 fit powder

  • 1 tbsp maple syrup

  • 2 tsp vanilla

  • 1 tsp baking powder

  • 2 tbsp chia seeds

  • 3 chopped medjool dates

  • Chocolate chips, to sprinkle on top

  • White chocolate chips, optional, to sprinkle on top. (I thought this was a yummy addition!)

  • For the high protein icing:

  • 1/2 cup milk, your choice (I used fat-free Fairlife)

  • 1/2 cup yogurt, of your choice (I used fat-free Greek)

  • 1/2 cup PB2 Fit Powder

  • 1/2 cup vanilla protein powder

Instructions:

  1. Preheat over to 350.

  2. Mix all ingredients into a bowl besides the chocolate chips.

  3. Pour into a greased baking dish- I used 8x8.

  4. Bake for 30 minutes.

  5. In the meantime, time to make your icing! Add all the icing ingredients into a blender or food processor and blend until smooth. Add more milk as needed to thin & more PB Fit and protein to thicken. (I added a little more protein, yogurt, and a tiny bit more milk, and I thought that made it a perfect consistency!)

  6. Spread icing over your baked oats and top with chocolate and/or white chocolate chips. They will melt naturally.

  7. You can store it in the fridge for 5 days and eat it cold right out of the fridge!
