Chocolate Baked Oats With Peanut Butter Protein Icing

Ingredients:

  • 2 cups rolled oats

  • 2 cups milk, of your choice (I used fat-free Fairlife)

  • 1/4 cup cacao powder

  • 1 1/2 scoop chocolate brownie protein powder (or similar flavor)

  • 1/2 cup PB2 fit powder

  • 1 tbsp maple syrup

  • 2 tsp vanilla

  • 1 tsp baking powder

  • 2 tbsp chia seeds

  • 3 chopped medjool dates

  • Completely optional: Lily’s chocolate or white chocolate chips, to sprinkle on top after the icing. (I have some in the picture, but I haven’t used them since; they are still super yummy!)

  • For the high protein icing:

  • 1/2 cup low-fat Fairlife milk

  • 1/2 cup vanilla greek yogurt

  • 1/2 cup PB2 Fit Powder

  • 1/2 cup vanilla protein powder

Instructions:

  1. Preheat over to 350.

  2. Mix all ingredients into a bowl besides the chocolate chips.

  3. Pour into a greased baking dish- I used an 8x8.

  4. Bake for about 25 minutes.

  5. In the meantime, it's time to make your icing! Add all the icing ingredients to a blender or food processor and blend until smooth. Add more milk as needed to thin and more protein powder to thicken. (It will depend on your protein powder.)

  6. Spread icing over your warm baked oats.

  7. Optional: If the icing is still warm, you can top it with chocolate and/or white chocolate chips. They will melt naturally. I have made it without, and the icing is still sweet enough!

  8. Reheat leftovers in the microwave or eat cold! I prefer warm, but my kids like them cold :)
