Slow Cooker Chicken Taco Bowls

Ingredients:

  • 2 lb ground chicken

  • 1 large onion, diced

  • 2 bell peppers, diced

  • 2 zucchini, diced

  • ½ tsp crushed pepper

  • ½ tsp black pepper

  • 2 tsp paprika

  • ½ tsp cumin

  • ½ tsp salt

  • 15-20 oz diced tomatoes with green chilis

  • ½ cup shredded cheddar cheese

  • 2 g cilantro

  • Loaded Taco Quest Protein Chips, for serving

Instructions:

  1. Cook the ground chicken in a skillet first, breaking it up.

  2. Add all diced vegetables and ground chicken to the slow cooker with seasoning/spices.

  3. Cook on low for 4 hours, 2 ½ hours on high.

  4. When meat and vegetables are cooked, top with shredded cheddar cheese and cilantro, and serve! I also enjoyed this with the Loaded Taco Quest Protein Chips!
