Slow Cooker Chicken Taco Bowls
Ingredients:
2 lb ground chicken
1 large onion, diced
2 bell peppers, diced
2 zucchini, diced
½ tsp crushed pepper
½ tsp black pepper
2 tsp paprika
½ tsp cumin
½ tsp salt
15-20 oz diced tomatoes with green chilis
½ cup shredded cheddar cheese
2 g cilantro
Loaded Taco Quest Protein Chips, for serving
Instructions:
Cook the ground chicken in a skillet first, breaking it up.
Add all diced vegetables and ground chicken to the slow cooker with seasoning/spices.
Cook on low for 4 hours, 2 ½ hours on high.
When meat and vegetables are cooked, top with shredded cheddar cheese and cilantro, and serve! I also enjoyed this with the Loaded Taco Quest Protein Chips!
