Banana Protein Peanut Butter Cups
Ingredients:
2 Bananas
⅔ cup creamy peanut butter (or nut butter of choice!)
2 Scoops Whey Protein vanilla flavor
1 cup of Lily’s white or chocolate chips
1 Tbsp Coconut oil
Optional sprinkles, to decorate
Instructions:
Place silicone cups or paper liners in the wells of a muffin tin and set aside.
Mix the protein powder and peanut butter in a small bowl until smooth. (Picture the inside of a Reese’s peanut butter cup) It should be easy to handle and roll into a ball, not too sticky. Add more peanut butter or protein powder as needed.
Place a banana slice in each liner, about an inch thick.
Scoop about 2 teaspoons of the peanut butter mixture and roll into a ball. Use your fingers to press it down onto the top & the sides of the banana slice, smoothing it out. Don’t worry about getting the exact amount; use it similarly to an ice cream scooper.
Place the chocolate chips and coconut oil into a microwave-safe bowl; microwave in 30-second increments until fully melted.
Add 1-2 teaspoons of chocolate on top of the peanut butter mixture, just enough to cover. (A thinner layer of chocolate makes it easier to bite into when cold.) Optional: Decorate with sprinkles here!
Depending on the chocolate you use and the nut butter, you may need to make more of the protein center or chocolate to end up using all the banana slices. Note: You can store any leftover melted chocolate in the fridge.
Place into the fridge to harden. (freeze if impatient!) After hardening overnight, if you did not use sprinkles, you can decorate by drizzling chocolate on top.
Store in the refrigerator until ready to serve. Enjoy!
