Sheet Pan Tilapia & Veggies

Ingredients:

  • 6-9 tilapia fillets (you may need 2 pans for all the veggies if you add extra tilapia)

  • 5-6 cloves garlic crushed and diced

  • 3 tablespoons olive oil or melted butter

  • 2 tablespoons lemon juice + a little extra to sprinkle on at the end

  • 2 teaspoons fresh Parsley or dried

  • 1 teaspoon Oregano fresh or dried

  • salt and pepper to taste

  • 2 large zucchini sliced

  • 2 cups baby carrots cut in halves

  • 3 cups broccoli florets fresh or frozen

  • Oil of choice to spray on veggies

  • Garlic powder & garlic salt to sprinkle on the veggies, to taste

  • Jasmine rice or rice of choice, for serving

Instructions:

  1. Preheat oven to 400F.

  2. Heat olive oil on low-medium heat in a small pan. Add garlic and sauté on low for about 1 minute. Remove from heat and add lemon juice, parsley, oregano, and salt + pepper to taste.

  3. Arrange fish and veggies in a single layer on 1-2 sheet pans (depending on how much fish you decide to cook). Evenly pour the garlic spice mixture onto the fish. (Any veggies that do not fit on the pans can go on a separate sheet. Asparagus would also be yummy to add here!)

  4. Spray the veggies with oil and sprinkle on the garlic powder and garlic salt onto the veggies, to taste.

  5. Drizzle on a little more lemon juice over the fish and veggies and then bake for 12-15 minutes or until golden.

  6. Serve with rice! I chose jasmine that I made in the pressure cooker.
