Fluffy Sheet Pan Protein Pancakes

Ingredients:

  • 4 cups Kodiak Cakes (extra for meal prep!)

  • 3 cups low-fat plain Fairlife Milk or milk of your choice

  • 4 eggs

  • 1.5 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1 cup maple syrup plus more for topping

  • 4 teaspoons vanilla extract

  • Fruit ideas for the top:

  • Fresh blueberries

  • Fresh strawberries

  • Banana slices

Instructions:

  1. Preheat oven to 425 degrees. Combine all of the ingredients (besides the fruit) in a bowl until smooth.

  2. Line a baking sheet with parchment paper. Pour batter into the sheet pan, spreading out with a rubber spatula.

  3. Add the fruit of choice to the top, creating sections. These will be pretty fluffy, so feel free to push the fruit down into the mixture.

  4. Bake for about 12 minutes or until golden brown and springy to the touch. If unsure, insert a toothpick into the center. It should come out clean.

  5. Allow to cool for about 15 minutes before cutting and removing from the sheet pan.
