Salted Caramel Snicker-doodle Protein Balls

These are definitely a sweeter option compared to my other protein balls! I was craving snickerdoodle cookies, and these satisfied me!

Ingredients:

  • 3/4 cup oat flour

  • 1/2 cup vanilla protein

  • 1/2 cup caramel chips (I used Lilly’s Salted Caramel Chips)

  • 1 tbsp cinnamon, plus extra to sprinkle on top

  • 1/4 tsp sea salt

  • ½ tsp vanilla extract

  • 1/2 cup honey or sugar-free maple syrup

  • 1/2 cup nut butter, of choice

Instructions:

  1. In a large bowl, add all your dry ingredients. Then mix in your nut butter, extract, and honey. Mix well (I use my hands) and roll into bite-size balls.

  2. You can then roll bites in the extra protein/cinnamon powder after you roll. Or just sprinkle cinnamon on top!

  3. Feel free to roll into larger bites or smaller ones to make more. Add more honey/nut butter if they are too dry to roll. It just depends on the type of protein you use.

  4. Freeze or keep in refrigerator to maintain freshness. I preferred eating them at room temperature, though!
