Fudge Protein Brownies (with Fiber!)
Ingredients:
¼ Cup Rolled Oats
¼ Teaspoon Salt
¼ Teaspoon Ground Cinnamon
1 Teaspoon Vanilla Extract
1 Scoop Protein Powder (I used Chocolate Brownie flavor! Vanilla or chocolate would work.)
¼ Cup Unsweetened Apple Sauce
3 Tablespoons Coconut Oil
¼ Cup Swerve Sweetener
3 Large Whole Eggs
4 Tablespoons Cocoa Powder
15 Ounces low-sodium Black Beans, drained and rinsed
2-3 Tablespoons Lilly’s Salted Caramel Chocolate Chips (or any that you prefer!)
Birthday Cake Halo Top, for serving (or flavor of choice!)
Instructions:
Preheat the oven to 350 degrees. Coat a baking dish with non-stick cooking spray.
Drain and rinse your black beans.
Add all the ingredients together into a food processor or blender, aside from your chocolate chips. Process or blend everything.
Pour into the prepared baking dish. With a spoon or spatula, stir in about 2 Tbsps of your chocolate chips. Sprinkle about 1 Tbsp on top.
Bake them for 25-30 minutes. Check with a toothpick to see if they are done. 25 minutes was perfect for my oven.
Serve warm. Top with Halo Top!
