Fudge Protein Brownies (with Fiber!)

Ingredients:

  • ¼ Cup Rolled Oats

  • ¼ Teaspoon Salt

  • ¼ Teaspoon Ground Cinnamon

  • 1 Teaspoon Vanilla Extract

  • 1 Scoop Protein Powder (I used Chocolate Brownie flavor! Vanilla or chocolate would work.)

  • ¼ Cup Unsweetened Apple Sauce

  • 3 Tablespoons Coconut Oil

  • ¼ Cup Swerve Sweetener

  • 3 Large Whole Eggs

  • 4 Tablespoons Cocoa Powder

  • 15 Ounces low-sodium Black Beans, drained and rinsed

  • 2-3 Tablespoons Lilly’s Salted Caramel Chocolate Chips (or any that you prefer!)

  • Birthday Cake Halo Top, for serving (or flavor of choice!)

Instructions:

  1. Preheat the oven to 350 degrees. Coat a baking dish with non-stick cooking spray.

  2. Drain and rinse your black beans.

  3. Add all the ingredients together into a food processor or blender, aside from your chocolate chips. Process or blend everything.

  4. Pour into the prepared baking dish. With a spoon or spatula, stir in about 2 Tbsps of your chocolate chips. Sprinkle about 1 Tbsp on top.

  5. Bake them for 25-30 minutes. Check with a toothpick to see if they are done. 25 minutes was perfect for my oven.

  6. Serve warm. Top with Halo Top!
