Protein Stuffed Mini Bell Peppers

These can be a delicious high-protein, low-fat snack with veggies, an appetizer, OR a great side dish! The whole family loved it- even my husband, who doesn’t like cottage cheese or raw bell peppers. He thought it tasted like chips and a chip dip!

Ingredients:

  • Low-fat cottage cheese

  • Low-sodium taco seasoning

  • Can of diced green chilis

  • Other mix-in ideas: buffalo sauce, hot sauce

  • Topping idea to add more spice: chili pepper

  • Shredded cheese- cheddar or Mexican

  • Mini bell peppers (or whole bell peppers or any veggie!)

Instructions:

  1. Blend the cottage cheese and low-sodium taco seasoning. There are no exact measurements- base it on how much you want and your taste preference!

  2. Stir in the green chilis. (I think it would taste fantastic to mix in a little buffalo sauce or hot sauce. I did not add yet because I wanted to introduce it to my kids first, but I will try those next!)

  3. Slice the mini bell peppers in half and remove the seeds.

  4. Scoop in the cottage cheese mixture.

  5. Sprinkle cheese on top (and chili pepper if you want more spice!)

  6. You can also serve this dip with almost any veggie. Enjoy!
