Oven Baked Taco Rolls
Also known as taquitos. I load mine with protein, so they are not as tightly rolled, but adjust to your liking! Less meat would be prettier, but we need all the protein gainz. :)
Ingredients:
2lbs lean ground beef
Low-sodium taco seasoning
Bell pepper, diced
Onion, diced
Mexican style shredded cheese
30 pack of Corn Tortillas (I make about 15 per batch)
Cheese dip or salsa, optional
Instructions:
Preheat oven to 400°F and line a sheet pan with foil. Set aside.
Heat a large non-stick skillet over medium-high. Add ground beef, bell peppers, and onion. Cook until no longer pink. Drain.
Once the beef is cooked, add taco seasoning.
Wrap tortillas in a damp paper towel and place them in the microwave for 30 seconds.
Sprinkle the shredded cheese into each tortilla (about 1-2 Tbsps) and then the meat- the amount to your liking. You’ll be able to roll them up tighter with less meat, but we try and add as much protein as possible.
Roll the tortilla and place them on the foil-lined sheet pan seam side down. Repeat until all tortillas are rolled. *Note: move quickly through this step! The tortillas will break and/or unfold as they start to cool. If they break while rolling them up, they need to be warmer from the microwave.
Lightly spray Olive Oil over the top and bake for 15 minutes or until the edges begin to brown.
You can dip them in cheese or serve them with salsa. Another idea is to drizzle melted cheese on top with diced tomatoes. So many options!
