Ground Beef Taco Bowl with Cilantro-Lime Rice

Also pairs fantastic with this High Protein Queso Dip!

Ingredients:

Cilantro Lime Rice:

  • 3 cups jasmine rice (for meal prep, but adjust the amount as needed!)

  • 3 cups low-sodium chicken stock

  • 2 large limes

  • 1/3 cup finely chopped cilantro

Taco Meat:

  • 3 pounds lean ground beef (for meal prep, but adjust the amount as needed!)

  • 2oz low-sodium taco seasoning (for the quickest method!)

    • Or, if you want to make your own, you can use the following seasonings per 1lb of ground beef:

      • 1 tablespoon chili powder

      • 1 teaspoon paprika

      • 1 teaspoon cumin

      • 1/4 teaspoon ground cayenne pepper

      • 1/2 teaspoon oregano

      • 1/2 teaspoon salt

      • 1/2 teaspoon pepper

  • ½ red onion, diced

  • 1 1/2 cups frozen corn or 1 can of fresh kernels

  • 1 can low-sodium black beans

  • 2 bell peppers, chopped

Toppings:

  • 5 roma tomatoes, diced

  • Shredded lettuce

  • Mexican style shredded cheese

  • Quest Tortilla Style Protein Chips or Sweet Potato Tortilla Chips

  • Make it your own! Other topping ideas:

    • Fresh cilantro

    • Fresh lime juice

    • Fresh avocado

    • Salsa

    • Pico de gallo

Instructions:

  • Cilantro-Lime Rice: 

    • My favorite way to cook rice is in the pressure cooker. A 1:1 ratio comes out perfect every time. Add the rice and chicken stock to a pressure cooker and stir in the lime juice from both limes. Make sure all the rice is covered.

    • Cook on high for 3 minutes, with a natural release for 10 min.

    • Add cilantro and salt & pepper to taste.

  • Taco Meat:

    • Add ground beef to a skillet and cook for about 3-5 minutes, crumbling the beef as it cooks.

    • When there is just a little pink left, stir in the onions, corn, beans, and peppers. Drain the excess fat.

    • Add the seasonings.

    • Serve with the rice, chips, and toppings of your choice. Enjoy!
