Egg Roll in a Bowl

Ingredients:

  • 2lbs Ground Meat - chicken, beef, turkey, or pork all work great!

  • 1 Tablespoon olive oil

  • 2 Tablespoons minced garlic

  • 1 sweet onion, chopped

  • Black pepper, for seasoning your meat

  • About 25-30 ounces coleslaw mix (I used almost 2 16oz bags)

  • 8 ounces carrots, shredded

  • 2 Tablespoons rice vinegar

  • 2 Tablespoons sesame oil

  • 4 ounces low-sodium soy sauce

  • 2 teaspoons ground ginger

  • 2-4 Tablespoons Sweet & Sour Sauce - or Hoisin, Teriyaki, or Oyster Sauce for extra flavor

  • Optional mix-ins: green onions, sesame seeds, hot sauce, or hard-boiled eggs.

Instructions:

  1. Brown your meat with the olive oil on medium heat. Use a large wok, pot, or Ninja Foodi, something that has space to mix in the cabbage later.

  2. Add garlic, onion, and pepper as it's browning. Once browned, turn your burner down to low heat.

  3. Add in the rest of your ingredients. Mix everything around and let it cook for 5-10 minutes or until it's as tender as you want it to be.

  4. Add in your optional mix-ins. We added all of the above, and it was tasty!

The fun way I served it to the toddlers was in a fun, different bowl with some safe foods—grapes and peppers. I added an egg they decorated for Easter, which led to interaction with the meal.
