Crockpot Chicken Fajitas

Ingredients:

  • 1 lb boneless skinless chicken breasts

  • 1 jar fresh salsa

  • 2 cloves garlic, minced

  • 1 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp salt

  • 1 yellow onion, sliced

  • 1 red pepper, sliced

  • 1 green pepper, sliced

  • 1 yellow pepper, sliced

  • Optional toppings:

  • 1/2 cup grated cheddar cheese

  • 1 tbsp fresh chopped cilantro

  • Tortillas of choice, to serve

Instructions:

  1. Add everything to a slow cooker. Cook on high for 4 hours or on low for 8 hours.

  2. OPTIONAL: you can wait to add the onions and peppers the last 30min of cooking if you want more of a crunch. Adding it all the same time was easier for me to let it go and it was easier for the kids to eat.

  3. When done, take the chicken out to shred and then mix back in. Use a slotted spoon to scoop it out. Serve with Mexican rice to make a bowl or serve in tortillas with cheese and cilantro. Enjoy!
