Cilantro Lime Rice

Follow this link for regular jasmine rice. The steps are the same! The flavors are endless here. These steps make the perfect rice every time! The Cilantro-Lime rice is also included in this Ground Beef Taco Bowl.

Ingredients:

  • 2 cups jasmine rice

  • 2 cups low-sodium chicken stock

  • 1 tablespoon butter

  • 2 large limes

  • 1/3 cup finely chopped cilantro

  • Optional: Salt and peppers, to taste

Instructions:

  1. Pour rice and broth into the pot of the Ninja Foodi or a Pressure Cooker. Make sure to stir so that all of the rice is submerged.

  2. Add the butter and squeeze the limes. Mix into the rice.

  3. Secure the pressure cooker lid and turn nozzle to SEAL.

  4. Pressure cook on high for 3 minutes. Natural release (do nothing) for 10 minutes.

  5. After 10 minutes, move the nozzle to VENT.

  6. Add salt, pepper, cilantro, or any flavors of your choice. The possibilities are endless!
