Cheesy Chicken Air Fryer Taquitos
These crispy air-fryer taquitos use shredded chicken, melted cheese, and thin corn tortillas for a quick family-friendly meal or snack without deep frying.
A QUICK NOTE
Warm the tortillas before rolling so they stay flexible and are less likely to crack. Keep the taquitos seam-side down in the basket, and leave a little space between them so the air can circulate.
COOK TIME
10–12 minutes
INGREDIENTS
7 extra-thin corn tortillas
8 ounces shredded Mexican chicken
3 ounces shredded Mexican-blend cheese
Cooking spray or oil
DIRECTIONS
1. Lightly coat the air-fryer basket with cooking spray or brush it with oil.
2. Wrap the tortillas in a slightly damp paper towel and microwave for 30 seconds to soften them and help prevent cracking.
3. Place a little more than 1 ounce of shredded chicken and slightly less than ½ ounce of cheese on each tortilla.
4. Roll each tortilla tightly and place it seam-side down in the air-fryer basket.
5. Once all 7 taquitos are in the basket, generously coat the tops with cooking spray or brush them with about ½ tablespoon oil.
6. Air fry at 375°F for 10–12 minutes, or until golden and crisp. Turn the taquitos near the end of cooking for more even browning, if desired.
