Blueberry Banana Protein Muffins

The kids loved having these for breakfast meal prep! We cycle through overnight oats and baked oats for them, so this was fun to throw in the mix. And super easy.

Ingredients:

  • 3/4 cup whole wheat flour

  • 1/2 cup vanilla protein powder

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 large ripe banana (about 1/2-3/4 cup mashed)

  • 1/4 cup coconut milk (or your milk of choice!)

  • 1/4 cup maple syrup

  • 1 teaspoon vanilla

  • 1 large egg

  • 1/2 cup coconut oil (lightly melted)

  • 1/2 cup blueberries (fresh or frozen)

Instructions:

  1. Preheat the oven to 350 degrees.

  2. Mix the flour, protein powder, baking powder, salt, and cinnamon in a large mixing bowl.

  3. In a separate bowl, mash the banana until smooth. Add the milk, maple syrup, vanilla, egg, and coconut oil, and whisk together.

  4. Pour the liquid ingredients into the dry ingredients and mix until combined (ensure not to over-mix the batter).

  5. Mix in the blueberries.

  6. Pour into a lined cupcake or muffin tin and bake for 25 minutes (or until a toothpick comes out clean).

  7. My favorite was eating these warm! I stored the extra in the fridge and reheated them in the morning for the kids’ breakfast.
