Baked Chicken Meatballs

Ingredients:

  • 2 pounds ground chicken or turkey

  • 2 eggs

  • 1 cup panko breadcrumbs

  • 1 cup grated Parmesan cheese

  • 2 tablespoons olive oil (optional – makes meatballs more moist and yummy)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • black pepper, to taste (I added 1/4-1/2 tsp)

  • 1/2 tsp parsley (heaping 1/2 tsp)

  • Italian seasoning, to sprinkle on top

Instructions:

  1. Preheat the oven to 400 degrees. Line a baking sheet with foil and a little cooking spray.

  2. Mix all the ingredients in a mixing bowl. Use your hands to make sure it mixes evenly.

  3. Roll the mixture into medium-sized balls.

  4. Place on baking sheet. Sprinkle with the Italian seasoning.

  5. Bake for 25 minutes or until there is no more pink inside.

  6. Serve with just about anything! We’ve done chickpea pasta or rice, veggies, pasta sauce or no sauce- they are delicious either way!
