Apple Coconut Quinoa Balls

I use this for the kiddos' meal prep and snacks. Due to its low sugar content, it is perfect for the young ones, and they love it! For adults or older kids, I would add some honey or sweetener of choice.

Ingredients:

  • 1 cup cooked quinoa

  • 1 cup dry rolled oats

  • 1 tsp ground cinnamon

  • 1 apple, peeled and grated

  • 1 ripe banana, smashed

  • ⅓ cup unsweetened shredded coconut

  • For adults: honey or sweetener of choice!

Instructions:

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

  2. Wash, dry, and peel the apple. Grate the apple into a mixing bowl. Peel and mash the banana into the bowl. Then mix in the cooked quinoa, dry oats, and cinnamon. If you are adding a sweetener, add that here as well.

  3. Mash and mix the ingredients until they start to stick together. Form the mixture into balls about 1 ½ inches in diameter.

  4. Roll the balls in the shredded coconut.

  5. Evenly space on the tray. Bake until the balls start to crisp, about 15 minutes.

  6. Cool to room temp. These store well in the fridge for the week or in the freezer!
