Tortellini Salad

Ingredients:

  • 2 8.8 ounce packages of 3 cheese tortellini

  • 3 1/2 cups broccoli florets, cut bit sized

  • 1 1/2 cups grape tomatoes, halved

  • 1 Cucumber, chooped

  • 1 sliced red onion

  • 1/4 cup sliced black olives

  • 1/4 cup extra virgin olive oil

  • 1/4 cup red wine vinegar

  • 1/2 teaspoon kosher salt, plus more for water

  • 4 cloves minced garlic

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried parsley

  • Optional: can omit any of the above veggies and can add any favorites! Can also add a protein (such as ham) or serve on a side of protein.

Instructions:

  1. Bring a large pot of salted water to a boil.

  2. When boiling, blanch the broccoli for about 30 seconds to 1 minute and remove it with a slotted spoon and rinse under cold water to stop it from cooking.

  3. Add the tortellini to the boiling water and cook according to the package directions.

  4. Drain and rinse under cold water, then add to a large bowl with the remaining ingredients.

  5. Mix well and refrigerate until chilled. Serve cold, alongside a protein if you don’t add additional protein to it.
