Sweet Potato Chicken Stew

The toddlers had fun learning how to “slurp” with this one. Tip: give them “fun” spoons to use. They used measuring spoons here. Helps with trying new foods! Lots of nutritious foods for them in this one!

Ingredients:

  • About 3 pounds chicken breast, chopped

  • 1 15oz can chickpeas, drained & rinsed

  • 4-5 yellow sweet potatoes, chopped

  • 10-12 ounces carrots, baby or chopped

  • 1 1/2 cups Corn, frozen

  • 2 cans fire-roasted diced tomatoes

  • 4 tablespoons coconut flour

  • 3 teaspoons minced garlic

  • 4 teaspoons ground cumin

  • 2 teaspoons paprika

  • 2 teaspoons ground allspice

  • 1/2 teaspoon salt

  • 1 teaspoon black pepper

  • 4 tablespoons BBQ sauce

  • 1 white onion, chopped

  • 32 Ounces bone broth, chicken

  • Garlic powder, to taste (for after cooking. I added a little bit!)

Instructions:

  1. Add all of the ingredients to your crock pot.

  2. Mix everything around.

  3. Cover and cook it on low for 7-8 hours or high for 3-4 hours (mix occasionally if you are around).
