Slow Cooker Steel Cut Oats

This is an easy way to make oatmeal in bulk. Mix in water, reheat, and then flavor as you like!

Ingredients:

  • Crockpot liner or oil/butter to grease the inside of the crockpot

  • 2 cups regular steel-cut oats

  • 4 cups water

  • 3 cups low-fat plain Fairlife milk, or your choice

  • 2 teaspoons cinnamon

  • ¼ cup sugar-free maple syrup

  • 1 teaspoon vanilla extract

  • ¼ teaspoon kosher salt

  • ¼ cup swerve brown sugar

  • Protein powder, flavor of your choice

  • Optional for serving:

    • Chopped nuts

    • Nut butter

    • Sweetener of choice

Instructions

  1. Insert the slow cooker liner or grease the bottom and sides of the slow cooker with oil or butter.

  2. In the slow cooker, combine the steel-cut oats, water, milk, syrup, brown sugar, cinnamon, vanilla, and salt.

  3. Place the lid on the slow cooker and cook for 6 hours on low.

  4. To serve, mix in a little bit of water and then add a scoop of protein powder. (I enjoy a fruity flavor or Chocolate Brownie) Mix in extra sweetener or chopped nuts, if desired.

  5. For reheating, stir in more water and pop it in the microwave first, .then add the protein powder.
