One-Skillet Pork Chops with Apple Slices & Onions Cooked in Apple Cider
I would definitely add asparagus to this next time! I was running around with the kids, due to the hubs working late, so I totally missed adding greens to this. Air fried asparagus would be delicious!
Tip: Don’t leave the last pork chop sitting on the kitchen counter because your dog might eat it…epic FAIL…
Ingredients:
4 1/2-inch-thick bone-in pork chops (about 4 ounces each)
2 teaspoons fresh sage, chopped
salt and ground pepper, to taste
2 tablespoons extra-virgin olive oil, divided
2 apples, thinly sliced
1 large yellow onion, thinly sliced
1 teaspoon fresh rosemary, chopped
1/2 teaspoon fresh thyme, chopped
3/4 cup apple cider (NOT vinegar)
Instructions:
Rub pork chops on all sides with prepared sage, salt, and pepper.
Heat a large cast-iron skillet over high heat and add 1 tablespoon of olive oil. Add pork chops to the skillet and sear on both sides; about 4 minutes per side. Remove pork chops from the skillet and set aside.
Add the remaining olive oil and stir in the apples and onions; season with rosemary, thyme, salt, and pepper. Cook over medium-high heat for 4 to 5 minutes, or until tender and lightly browned. Stir in the cider and scrape the bottom of the pan to release any browned bits.
Return pork chops to the skillet; cover and cook, turning once, for 5 minutes, or until cooked through. Remove from heat; rest for 5 minutes and serve.
This dish pairs really well with mashed sweet potatoes (the yellow kind!) with some of the apples, onions, and apple cider mixture on top. Air fry some asparagus on the side!
