Oatmeal Bites

Ingredients:

  • 2 ripe bananas (and extra slices for toppings)

  • 1/2 cup peanut butter (or nut butter of choice)

  • 2 1/2 cups milk, of choice

  • 1/2 cup sugar-free maple syrup

  • 6 cups gluten-free rolled oats

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • Optional Toppings: Strawberries, blueberries (fresh or frozen is fine), sliced bananas, chocolate chips, jam, nut butter

Instructions:

  1. Preheat the oven to 350F.

  2. In a bowl, mash the bananas. Add in the other ingredients and stir together well. You want to use a spoon or spatula, not a hand mixer.

  3. This makes 24 cups. Spray two 12-cup muffin tins with nonstick spray or use silicone cups.

  4. Add about three spoonfuls of the oatmeal mix to each cup.

  5. Then add toppings! (all can be added before baking, besides the extra nut butter. Add that when you eat them!)

  6. Bake for 25-28 minutes, let cool for 10 minutes, remove and enjoy!

  7. Store in the fridge for the week, and you can freeze any extras.

  8. Optional to reheat in the microwave or eat cold. (If they were frozen, reheat in a toaster oven, air fryer, or microwave.)
