Maple Vanilla Protein Fudge

Ingredients:

  • 4 scoops Vanilla protein powder (I used whey)

  • 4 tbsps coconut flour

  • 4 tbsps creamy peanut butter (or nut butter of choice)

  • 4 tbsps coconut oil, divided

  • 2 tsps Swerve Sweetener

  • 2 tsp cocoa powder

  • 2 tsp vanilla

  • 1/2 cup sugar-free maple syrup

  • a dash of sea salt

  • 1/2 cup Lilly’s sugar-free White Chocolate Chips (you can use milk or dark chocolate too!)

Instructions:

  1. In a large bowl, combine all ingredients except the chocolate chips and 2 tbsps of coconut oil.

  2. Mix well, press into a medium-sized glass container, and store in the fridge. (I only had a circular dish handy, but a rectangle would be best!)

  3. Melt the chocolate and remaining coconut oil in the microwave for about 30 seconds. Stir well, and if needed, continue to heat in 10-15 sec intervals.

  4. Pour over the fudge and return to the fridge. Let it sit in the fridge overnight for best results, but you can start eating it once the chocolate has hardened!

  5. Cut into squares and store in the fridge in a closed container.
