Ground Chicken Mac-N-Cheese With Bacon

Ingredients:

  • 2 pounds Ground Chicken

  • 16 oz Chickpea Shell Pasta

  • 5 slices Bacon, saving 1 piece for the top

  • 6 cloves Garlic, minced

  • 5-6 cups Chicken Broth

  • 2 cups Plain fat-free Fairlife, or milk of choice

  • 8 oz Freshly Shredded Cheddar Cheese

  • 1 oz Freshly Shredded Parmesan

  • Optional Seasoning:

  • 2 tsp Dry Mustard

  • 2 tsp Parsley Flakes

  • ¾ tsp Black Pepper

  • 1/2 tsp Ground Nutmeg

  • 1/2 tsp Salt, to taste

  • Chili pepper flakes, optional for garnishing

Instructions:

  1. Start by cooking the ground chicken in a skillet until no longer pink, set aside.

  2. While the chicken is cooking, use the Ninja Foodi's sauté function to fully cook the bacon. (Note- this can all be done in a skillet on the stovetop too. I prefer to use the Ninja Foodi here, but you do not have to use that.)

  3. Once the bacon is cooked, transfer the cooked bacon to a paper towel to cool. Crumble into smaller pieces.

  4. Turn off the Foodi and add the garlic to the remaining bacon grease. Cook until the garlic starts to turn golden brown, about 30 seconds.

  5. Add the uncooked pasta & chicken broth to the Foodi. Goal is to submerge all the noodles. Stir to incorporate the garlic.

  6. Seal the Foodi and cook on HI pressure for 3 minutes with quick release pressure (vent immediately).

  7. Remove the lid and add the milk to the pasta. Gently stir while gradually adding the shredded cheese.

  8. Once everything is melted and creamy, add the cooked bacon back to the mac. Then add the ground chicken & dry spices.

  9. Top with chili pepper flakes and serve with a broccoli salad!
