Garlic Parmesan Tilapia

Ingredients:

  • 6 tilapia fillets, thawed

  • 1/4 cup extra-virgin olive oil (or just enough to be able to brush onto the fillets)

  • Kosher salt

  • Freshly ground black pepper

  • 1 cup finely shredded parmesan (grated would also work!)

  • 1/2 cup breadcrumbs

  • 5 cloves garlic, minced

  • Juice and zest of 1 lemon

  • Tarter sauce, for serving

Instructions:

  1. Preheat oven to 400 degrees.

  2. Mix the parmesan, bread crumbs, and minced garlic together in a bowl.

  3. Brush the olive oil on both sides of each fillet and sprinkle with salt and pepper.

  4. Dredge the fish in the breadcrumb mixture.

  5. I added more on top once they were back on the pan.

  6. Squeeze lemon juice onto the fillets.

  7. Bake for 10-12 minutes or until fork-tender.

  8. Serve with tartar sauce, rice, and a veggie!
