Garlic Parmesan Tilapia
Ingredients:
6 tilapia fillets, thawed
1/4 cup extra-virgin olive oil (or just enough to be able to brush onto the fillets)
Kosher salt
Freshly ground black pepper
1 cup finely shredded parmesan (grated would also work!)
1/2 cup breadcrumbs
5 cloves garlic, minced
Juice and zest of 1 lemon
Tarter sauce, for serving
Instructions:
Preheat oven to 400 degrees.
Mix the parmesan, bread crumbs, and minced garlic together in a bowl.
Brush the olive oil on both sides of each fillet and sprinkle with salt and pepper.
Dredge the fish in the breadcrumb mixture.
I added more on top once they were back on the pan.
Squeeze lemon juice onto the fillets.
Bake for 10-12 minutes or until fork-tender.
Serve with tartar sauce, rice, and a veggie!
