Beef and Sweet Potatoes Au Gratin

Ingredients:

  • 3 lbs. lean ground beef (extra for meal prep, feel free to adjust!)

  • 4-5 yellow sweet potatoes, sliced a ¼ inch thick

  • 1 white onion, thinly sliced

  • 3 tsp paprika

  • 1 ½ tsp garlic powder

  • 3 tsp parsley

  • 2 tsp salt

  • 1/2 tsp. pepper

  • 4 cups shredded sharp cheese, divided, plus extra for topping

  • 2 cups low-sodium beef or chicken broth

Instructions:

  1. Brown the ground beef on the stovetop, and drain the fat. Add a touch of salt and pepper to season.

  2. Combine the paprika, garlic powder, parsley, salt, and pepper in a small bowl.

  3. Add half of the potatoes to the slow cooker. Sprinkle over half of the onions, half of the seasonings, half of the meat, and half of the cheese.

  4. Repeat the layers.

  5. Drizzle the broth evenly over the layers.

  6. Cover and cook on high for 4 hours. Do not open the lid while cooking or the potatoes will not get soft.

  7. Serve warm, sprinkle with cheese, and serve with a veggie!
