Apple Pie Baked Oats

With protein, of course!

Ingredients:

  • Apple Mix:

  • 2 apples - Your choice, chopped, no need to peel (if you have a little one, you can slice in thin pieces instead to make it safer)

  • 1 tablespoon lemon juice

  • 2 tablespoons Swerve brown sugar

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon xanthan gum

  • Filling:

  • 2 large whole eggs

  • 1 cup unsweetened apple sauce

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cinnamon

  • 1 ½ cups rolled oats

  • 2 scoops protein powder - vanilla or any that would taste great with cinnamon apples (I’d LOVE to try a cinnamon roll flavor or pumpkin! That is on my list.)

  • 8 ounces low-fat plain Fairlife milk

  • 2 tablespoons Swerve brown sugar

  • ¾ teaspoon baking powder

  • ¼ teaspoon salt

Instructions:

  1. Preheat your oven to 375 degrees.

  2. Chop up your apples. No need to peel unless you want to! I would much rather save a few minutes :)

  3. Lightly toss your apple mix around until your pieces are coated.

  4. Combine your filling ingredients in a bowl and mix until smooth.

  5. Add your apple mix to the bottom of a baking dish. Pour your filling on top.

  6. Bake for around 40-45 minutes.

  7. Sprinkle cinnamon on top and serve warm.
