Bacon Chicken Quesadillas

Ingredients:

  • 1 lb Ground Chicken (easy to double! 2lbs gave the 4 of us enough for 2 dinners)

  • 6 slices Bacon

  • 2 Tbsp Ranch Seasoning

  • 8 oz Cheddar, shredded

  • 8 Mission Carb Balance Tortillas (the amount will depend on how much meat you make and how full you make them. We pile in the protein!)

  • For an optional dip:

    • a pinch of ranch seasoning

    • hot sauce

    • fat-free plain greek yogurt

Instructions:

  1. Cook the bacon in a large skillet over medium-high heat. Transfer the cooked bacon to a paper towel and drain the remaining grease.

  2. Add the ground chicken and cook until no pink remains.

  3. Add the ranch seasoning and bacon pieces back to the cooked ground chicken. Stir well until no visible ranch seasoning remains. Transfer the ground chicken mixture to a bowl or plate and set aside.

  4. Place the same skillet or a large griddle over medium heat. Spray with a little cooking spray and add tortilla(s). Sprinkle cheese on half of each tortilla, followed by the ground chicken mixture and some more cheese. Use a spatula to gently fold the tortilla in half, holding the top half closed for a few seconds to melt the top layer of cheese. Cook for another 1-2 minutes per side until golden brown. (Decrease the heat if your tortillas are browning too quickly.)

  5. For the optional dip: Mix a pinch of ranch seasoning and some hot sauce into the greek yogurt.

  6. Add hot sauce or salsa on top of the quesadillas. Serve with a veggie on the side!
