Air Fryer Chicken Fajitas

Ingredients:

  • 2 Pounds Boneless, Skinless Chicken Breasts

  • 1 Red Bell Pepper, Diced

  • 1 Green Bell Pepper, Diced

  • 1/2 Cup Sweet Onion, Diced

  • 2 Tablespoons of Gluten-Free Fajita or Taco Seasoning

  • Olive Oil Spray

  • Chili flakes and other spices, to taste

  • Corn and/or Flour Tortillas (fiber tortillas for the win!)

  • Mexican rice, for serving

Instructions:

  1. Spray the air fryer basket with olive oil spray.

  2. Slice the chicken into bite-size slices.

  3. Add the chicken to the basket along with the peppers, onion, and seasoning. Stir to mix it together. Spray evenly with a coat of olive oil cooking spray.

  4. Cook at 390 degrees for 12 minutes.

  5. Halfway through the cooking time, open the lid and stir up the fajita meat, then spray with another coat of olive oil spray.

  6. Cook for an additional 12 minutes or until chicken is well done at least 165 degrees. If yours is almost to this after the initial 12 minutes, then watch closely so you do not overcook.

  7. Serve with warm tortillas or in a bowl with Mexican rice!
