Air Fryer Chicken Bites
Maybe not the prettiest, but they were good! I made these “heart-shaped” for the kids and pitched them as “heart-shaped dino bites” to get their interest because I couldn’t make dinosaurs 🤣
Note: The ingredients do not have to be 100% precise for this recipe. It all gets blended together, and you won’t notice slightly more or less of something.
Ingredients:
2 thin-sliced chicken breasts, uncooked
About 1 large sweet potato, cooked (yellow is my favorite)
About 1/4 red onion, chopped
1 egg
1 tsp cornstarch
1/2 tsp salt
1/2 tsp black pepper
Instructions:
Peel the potatoes. Cook them in boiling water until you can smash them with a fork.
Using a food processor, blend all the ingredients together.
Set the air fryer to 360 degrees.
Spray the basket.
Using your hands, form the chicken into a normal-looking chicken nugget or attempt a “fun” shape for the kids.
Spray the tops of them.
Cook for about 15 minutes or until the insides are fully cooked. Flip halfway through. (Note: They will feel slightly “fluffier” inside because of the potatoes.)
Serve with your favorite dipping sauce!
